Ingredients

  • 2 lbs. chicken thighs (or breasts), cut into 1" cubes
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • Sesame seeds and chopped green onion for garnish

Instructions

  1. In a medium saucepan, combine cornstarch and water. Add brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, and sesame oil. Stir until simmering and thickened. Cool completely.
  2. Place cubed chicken in a ziplock bag; pour half the sauce over it and marinate in the fridge for at least 30 minutes.
  3. Preheat grill to medium heat. Thread chicken onto skewers.
  4. Grill skewers for 20-30 minutes, turning every few minutes and basting with remaining sauce until chicken reaches an internal temperature of 165°F.
  5. Serve topped with green onions and sesame seeds.
