- 1/2 white onion (finely chopped)

- 3 tbsp butter

- Epazote (optional)
- 5 Cups Water
- 1/2 cup cotija cheese
- 1/2 cup Mexican crema
- 1/2 cup Mayonnaise
- Lime juice (to taste)
- Hot sauce or chile powder (to taste)
Instructions
- In a frying pan, melt butter over medium heat. Add finely chopped onion and garlic, cooking until translucent.
- Stir in white corn kernels and sauté for about 5 minutes until softened.
- Pour in water and add salt (and epazote if using). Bring to a boil, then simmer for 20 minutes.
- Serve hot in cups topped with cotija cheese, Mexican crema, mayonnaise, lime juice, and your choice of spicy condiment.
