Ingredients

  • 6 Cups White Corn Kernels
  • 1/2 white onion (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 3 tbsp butter
  • Salt (to taste)
  • Epazote (optional)
  • 5 Cups Water
  • 1/2 cup cotija cheese
  • 1/2 cup Mexican crema
  • 1/2 cup Mayonnaise
  • Lime juice (to taste)
  • Hot sauce or chile powder (to taste)

Instructions

  1. In a frying pan, melt butter over medium heat. Add finely chopped onion and garlic, cooking until translucent.
  2. Stir in white corn kernels and sauté for about 5 minutes until softened.
  3. Pour in water and add salt (and epazote if using). Bring to a boil, then simmer for 20 minutes.
  4. Serve hot in cups topped with cotija cheese, Mexican crema, mayonnaise, lime juice, and your choice of spicy condiment.
