- 3 tbsp coconut sugar

- 2 tbsp cornstarch
- 1 cup old-fashioned rolled oats (gluten-free)
- ⅔ cup oat flour
- ½ cup chopped walnuts, almonds, or pecans (optional)
- ¼ cup coconut sugar (or light brown sugar)
- ½ tsp salt
- ¼ – ½ tsp ground cinnamon
- ⅓ cup melted coconut oil
- ¼ cup maple syrup
Instructions
- Preheat your oven to 375°F and lightly grease a 9×9-inch baking dish.
- Peel and slice the peaches into approximately ¾-inch pieces. Place them in a large mixing bowl.
- Add coconut sugar, lemon juice, vanilla extract, and cornstarch to the peaches and toss until coated. Transfer to the baking dish.
- In another bowl, combine oats, oat flour, coconut sugar, salt, and cinnamon. Stir in melted coconut oil and maple syrup until crumbly.
- Sprinkle the crumble topping evenly over the peach mixture.
- Bake for about 30–38 minutes until golden brown and bubbly around the edges.
