- 2 beef tenderloin fillets (6 to 8 ounces each)
- 8–10 large sea scallops
- 3 tablespoons unsalted butter (divided)
- 3 cloves garlic (minced)
- Fresh parsley and chives (for garnish)
- Freshly squeezed lemon juice and zest
- Kosher salt and freshly ground black pepper (to taste)
Instructions
- Heat a cast iron skillet over medium-high heat for 8-10 minutes.
- Pat steak dry, season with salt and pepper, and melt 2 tablespoons of butter in the skillet. Cook steak for 4-6 minutes on one side until a crust forms; flip and cook for an additional 3-4 minutes or until desired doneness.
- Remove steak and let rest. In the same skillet, melt remaining butter, pat scallops dry, season with salt and pepper, and sear for about 2-3 minutes per side until golden brown.
- For the garlic butter sauce, reduce heat to low, add minced garlic to the skillet, then stir in cubed butter, parsley, chives, lemon juice, and zest.
- Serve steak and scallops drizzled with garlic butter sauce.
