  • 2 beef tenderloin fillets (6 to 8 ounces each)
  • 810 large sea scallops
  • 3 tablespoons unsalted butter (divided)
  • 3 cloves garlic (minced)

  • Freshly squeezed lemon juice and zest
  • Kosher salt and freshly ground black pepper (to taste)

Instructions

  1. Heat a cast iron skillet over medium-high heat for 8-10 minutes.
  2. Pat steak dry, season with salt and pepper, and melt 2 tablespoons of butter in the skillet. Cook steak for 4-6 minutes on one side until a crust forms; flip and cook for an additional 3-4 minutes or until desired doneness.
  3. Remove steak and let rest. In the same skillet, melt remaining butter, pat scallops dry, season with salt and pepper, and sear for about 2-3 minutes per side until golden brown.
  4. For the garlic butter sauce, reduce heat to low, add minced garlic to the skillet, then stir in cubed butter, parsley, chives, lemon juice, and zest.
