  • 3 lbs Yukon gold potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup finely chopped fresh scallions (divided)
  • 2 tablespoons finely chopped fresh dill (divided)
  • 2 tablespoons finely chopped fresh parsley (divided)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Kosher salt and freshly cracked black pepper (to taste)

Instructions

  1. Boil cubed Yukon gold potatoes in salted water until tender (12-16 minutes). Drain thoroughly.
  2. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  3. Toss the drained potatoes with olive oil, garlic powder, salt, and pepper until well-coated.
  4. Roast the seasoned potatoes for about 30 minutes until golden brown and crispy.
  5. In a separate bowl, mix sour cream and mayonnaise; stir in scallions, dill, parsley, Dijon mustard, and lemon juice.
  6. Once the potatoes are done roasting, gently toss them with the dressing before serving.
