- 2 tablespoons finely chopped fresh parsley (divided)

- 1 tablespoon lemon juice

Instructions
- Boil cubed Yukon gold potatoes in salted water until tender (12-16 minutes). Drain thoroughly.
- Preheat the oven to 400°F and line a baking sheet with aluminum foil.
