  • 810 hard taco shells
  • 1 lb ground beef or shredded chicken
  • 1 cup black beans (drained and rinsed)
  • 1 yellow onion (finely diced)
  • 1 oz taco seasoning
  • 10 oz diced tomatoes with green chilies (undrained)
  • ¼ cup beef or chicken broth
  • 1 ¼ cups shredded cheddar cheese
  • Optional toppings: salsa, sour cream, shredded lettuce, diced avocado/guacamole

Instructions

  1. Preheat the oven to 400°F. Line taco shells in a casserole dish and bake for 3-5 minutes based on the dish color.
  2. In a frying pan over medium-high heat, cook and crumble the ground beef and onions until fully cooked (8-10 minutes). Drain excess grease.
  3. Add taco seasoning, undrained tomatoes, and broth to the meat mixture. Bring to a boil, then simmer for 1-2 minutes.
  4. Spoon black beans into each taco shell, followed by the meat mixture and top with cheese.
  5. Bake uncovered for about 7-10 minutes until cheese is bubbly.
