- 8–10 hard taco shells
- 1 lb ground beef or shredded chicken
- 1 cup black beans (drained and rinsed)
- 1 yellow onion (finely diced)
- 1 oz taco seasoning
- 10 oz diced tomatoes with green chilies (undrained)
- ¼ cup beef or chicken broth
- 1 ¼ cups shredded cheddar cheese
- Optional toppings: salsa, sour cream, shredded lettuce, diced avocado/guacamole
Instructions
- Preheat the oven to 400°F. Line taco shells in a casserole dish and bake for 3-5 minutes based on the dish color.
- In a frying pan over medium-high heat, cook and crumble the ground beef and onions until fully cooked (8-10 minutes). Drain excess grease.
