- 2 oz shredded smoked gouda cheese

- 1 tbsp pickled jalapeno juice
- 2 cups chopped, smoked brisket
- 2 bags tortilla chips
- 1 cup sweet & tangy barbecue sauce
- 2 1/2 cups shredded cheddar cheese (divided)
- 1 15 oz can black beans (drained & rinsed)
- pico de gallo (for garnish)
- pickled red onion (for garnish)
- sliced jalapeno (for garnish)
- crumbled cotija cheese (for garnish)
- sour cream (for garnish)
Instructions
- Prepare the cheese sauce by melting butter and whisking in flour until golden. Gradually add half and half, then stir in cheeses and spices until creamy.
- Preheat the oven to 350°F (175°C). Layer tortilla chips on a baking sheet followed by cheese sauce, brisket, black beans, and more chips. Repeat layers.
