  • 2 tbsp butter
  • 1 tbsp flour
  • 2 cups half and half
  • 4 oz shredded cheddar cheese
  • 2 oz shredded Monterrey jack cheese
  • 2 oz shredded smoked gouda cheese
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1 tbsp pickled jalapeno juice
  • 2 cups chopped, smoked brisket
  • 2 bags tortilla chips
  • 1 cup sweet & tangy barbecue sauce
  • 2 1/2 cups shredded cheddar cheese (divided)
  • 1 15 oz can black beans (drained & rinsed)
  • pico de gallo (for garnish)
  • pickled red onion (for garnish)
  • sliced jalapeno (for garnish)
  • crumbled cotija cheese (for garnish)
  • sour cream (for garnish)

Instructions

  1. Prepare the cheese sauce by melting butter and whisking in flour until golden. Gradually add half and half, then stir in cheeses and spices until creamy.
  2. Preheat the oven to 350°F (175°C). Layer tortilla chips on a baking sheet followed by cheese sauce, brisket, black beans, and more chips. Repeat layers.
  3. Bake for about 10 minutes until the cheese is bubbly and golden.
  4. Top with pico de gallo, pickled red onion, jalapenos, cotija cheese, and sour cream before serving.
