- 4 cups water
- 1 large yellow onion, peeled and quartered
- 3 garlic cloves, smashed
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 1.5 pounds small red potatoes, halved or quartered
- 3 medium carrots, peeled and cut into chunks (optional)
- 1 medium head green cabbage, cut into wedges
Instructions
- Rinse the beef brisket under cold water and pat dry.
- Pour water into the Instant Pot, adding onion, garlic, bay leaves, and peppercorns.
- Place the brisket fat side up in the pot, seal the lid, and cook on high pressure for 90 minutes.
- Allow pressure to release naturally for 15 minutes.
- Add halved potatoes and carrots around the brisket; cook on high pressure for an additional 5 minutes.
- Quick release the pressure, then add cabbage wedges on top; steam for another 3 minutes.
- Quick release again, remove vegetables carefully, slice beef against the grain, and serve.
