- 2 cups strawberries (303g), pureed
- 1 tablespoon (15 ml) lemon juice
- 2 tablespoons (24g) granulated sugar
- 1 tablespoon flour (8g), sifted
- 2 ½ cups (592ml) heavy whipping cream
- 1 ¼ cup (163g) powdered sugar
- 1 teaspoon (5ml) vanilla extract
- 16 ounces mascarpone cheese, cold
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix granulated sugar and vegetable oil until blended. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, alternating with milk until combined.
- Divide the batter between the prepared pans and bake for approximately 20 minutes or until a toothpick comes out clean. Cool in pans for a few minutes before transferring to wire racks.
- For the strawberry filling, combine pureed strawberries, lemon juice, sugar, and sifted flour in a saucepan over medium heat until thickened; let cool.
- For the frosting, beat heavy whipping cream until soft peaks form. Gradually add powdered sugar and vanilla; continue beating until stiff peaks form. Fold in cold mascarpone cheese.
