Ingredients

Scale
  • 1 large egg
  • 1/2 cup light brown sugar
  • 1/3 cup canola oil
  • 1/4 cup granulated sugar
  • 1/4 cup Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed ripe bananas (about 2 large)
  • 1 1/2 cups fresh strawberries (quartered)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. In a large bowl, whisk together the egg, brown sugar, oil, granulated sugar, Greek yogurt, and vanilla until well combined.
  3. Gently fold in the flour, baking powder, baking soda, and salt until just mixed.
  4. Add the mashed bananas and fold gently into the batter.
  5. Toss the quartered strawberries in flour to prevent sinking; fold them into the mixture.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55 to 65 minutes until golden brown and a toothpick comes out clean.
  8. Let cool in the pan for about 15 minutes before transferring to a wire rack.
