  • 1 (8-10 pound) beef shoulder roast or beef butt
  • 1/4 cup yellow mustard
  • 1/4 cup brown sugar
  • 1/4 cup coarse sea salt
  • 3 tablespoons cracked black pepper
  • 2 tablespoons smoked paprika
  • 2 teaspoons chipotle powder (optional)
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder

Instructions

  1. Preheat your pellet smoker to 225°F for indirect cooking.
  2. Pat the beef dry and coat it with yellow mustard.
  3. Combine the rub ingredients in a bowl (reserve 2 tablespoons of the mixture).
  4. Rub the spice mixture liberally over the beef.
  5. Place the beef on the smoker fat side up and insert a meat thermometer.
  6. Smoke until the internal temperature reaches between 195-202°F (approximately 12 to 20 hours).
  7. Wrap in aluminum foil and let rest for at least one hour.
  8. Shred with forks or claws and sprinkle with reserved seasoning before serving.
