  • 6 oz cheddar cheese
  • 6 oz Monterey jack cheese
  • 6 oz gouda cheese
  • 16 oz Velveeta
  • 2 cups grated Parmesan cheese
  • 1 lb box macaroni noodles
  • 8 cups water
  • 2 tsp kosher salt
  • 1/2 stick butter (4 tbsp)
  • 3 cups milk (divided)
  • 1 tsp granulated garlic
  • 1 tsp black pepper
  • 1 tbsp BBQ rub

Instructions

  1. Preheat the smoker to 350-375°F using oak wood for added flavor.
  2. Shred all cheeses together in a large bowl until mixed.
  3. In a large pot, bring water and salt to a boil, then cook macaroni for about 7-8 minutes until al dente. Drain and rinse with cold water.
  4. Melt butter, Velveeta, and 3 cups of shredded cheese with 2 cups of milk in another pot over medium heat until smooth.
  5. Combine cooked noodles in an aluminum half pan with Parmesan, garlic, black pepper, remaining shredded cheese mix, and an additional cup of milk.
  6. Pour the cheese sauce over the noodle mixture, stir well, top with more shredded cheese, an extra cup of milk, and BBQ rub.
  7. Place in the smoker for about 30 minutes until bubbly.
