- 6 oz cheddar cheese
- 6 oz Monterey jack cheese
- 6 oz gouda cheese
- 16 oz Velveeta
- 2 cups grated Parmesan cheese
- 1 lb box macaroni noodles
- 8 cups water
- 2 tsp kosher salt
- 1/2 stick butter (4 tbsp)
- 3 cups milk (divided)
- 1 tsp granulated garlic
- 1 tsp black pepper
- 1 tbsp BBQ rub
Instructions
- Preheat the smoker to 350-375°F using oak wood for added flavor.
- Shred all cheeses together in a large bowl until mixed.
- In a large pot, bring water and salt to a boil, then cook macaroni for about 7-8 minutes until al dente. Drain and rinse with cold water.
- Melt butter, Velveeta, and 3 cups of shredded cheese with 2 cups of milk in another pot over medium heat until smooth.
- Combine cooked noodles in an aluminum half pan with Parmesan, garlic, black pepper, remaining shredded cheese mix, and an additional cup of milk.
- Pour the cheese sauce over the noodle mixture, stir well, top with more shredded cheese, an extra cup of milk, and BBQ rub.
- Place in the smoker for about 30 minutes until bubbly.
