- 1 pound tomatillos (husks removed and rinsed)
- 1 small white onion (quartered)
- 1 serrano chile (stemmed)
- ½ cup fresh cilantro
- 1 teaspoon minced fresh garlic
- 1 teaspoon honey or maple syrup
- 1 teaspoon kosher salt (plus more to taste)
Instructions
- Preheat the broiler to high heat and position the rack about 6 inches from the heating element.
- Line a baking sheet with foil for easy cleanup.
- Arrange tomatillos, onion, and serrano chile on the baking sheet. Roast under the broiler for 15–17 minutes until charred on all sides, turning occasionally.
- Transfer roasted vegetables to a food processor along with cilantro, garlic, honey or maple syrup, and kosher salt. Purée until smooth; taste and adjust seasoning if necessary.
