Description

Ingredients

  • 1 pound tomatillos (husks removed and rinsed)
  • 1 small white onion (quartered)
  • 1 serrano chile (stemmed)
  • ½ cup fresh cilantro
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon kosher salt (plus more to taste)

Instructions

  1. Preheat the broiler to high heat and position the rack about 6 inches from the heating element.
  2. Line a baking sheet with foil for easy cleanup.
  3. Arrange tomatillos, onion, and serrano chile on the baking sheet. Roast under the broiler for 15–17 minutes until charred on all sides, turning occasionally.
  4. Transfer roasted vegetables to a food processor along with cilantro, garlic, honey or maple syrup, and kosher salt. Purée until smooth; taste and adjust seasoning if necessary.
