  • 6 large red bell peppers
  • 2 heads of garlic
  • 2 tablespoons butter
  • 1 cup vegetable or chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup nonfat milk
  • 1/2 cup freshly grated Parmesan cheese
  • 16 ounces fettuccine
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Roast the garlic and broil the red peppers until charred. Peel and chop the peppers.
  2. Cook fettuccine according to package instructions; drain.
  3. Sauté diced onions in olive oil until soft; add garlic if using raw.
  4. Blend roasted peppers, garlic, and sautéed onions until smooth.
  5. In the pot, melt butter and mix in the red pepper puree with broth, cream, milk, salt, and pepper.
  6. Stir in Parmesan cheese until melted; toss with cooked fettuccine.
