  • 2 heads of cabbage
  • 1 cup frozen riced cauliflower
  • ½ pound deli-sliced corned beef (or pastrami)
  • 1 cup sauerkraut
  • 1 cup shredded Swiss cheese
  • ½ cup Thousand Island dressing

Instructions

  1. Bring a large pot of salted water to boil and blanch cabbage heads for 2-3 minutes until leaves are softened. Cool slightly and peel off individual leaves.
  2. In a mixing bowl, combine riced cauliflower, chopped corned beef (or pastrami), drained sauerkraut, shredded Swiss cheese, salt, and pepper. Mix well.
  3. Place about 2 tablespoons of filling at the base of each cabbage leaf, fold sides over, and roll tightly.
  4. Preheat the oven to 375°F (190°C). Arrange rolls seam-side down in a baking dish, drizzle with Thousand Island dressing, and cover with aluminum foil. Bake for 30 minutes, then remove foil and bake for an additional 15 minutes until golden brown.
