  • 4 large poblano peppers
  • 2 tablespoons vegetable oil
  • ½ yellow onion (sliced)
  • 3 cloves garlic (minced)
  • 1 cup corn kernels
  • ½ cup Mexican crema (or sour cream/heavy cream)
  • 5 ounces melty Mexican style cheese (shredded)
  • 1 teaspoon chili powder (optional)
  • ½ teaspoon Mexican oregano
  • Salt and pepper to taste

Instructions

  1. Roast the poblano peppers over a stovetop flame or bake them until charred.
  2. Place the roasted peppers in a plastic bag to steam and cool.
  3. Peel off the skins, remove the stems and seeds, then slice into strips.
  4. In a pan, heat oil over medium heat; sauté onions until translucent.
  5. Add garlic and corn; cook for another minute.
  6. Stir in the poblano strips and cook for one minute.
  7. Mix in the crema and seasonings; stir well to combine.
