  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • ½ tablespoon garlic powder
  • 3 teaspoons salt
  • 2 tablespoons vegetable oil (for searing)
  • ¾ cup fresh orange juice
  • 1 yellow onion (sliced thickly)
  • 1 jalapeno (halved, stem removed)
  • 16 corn tortillas
  • Toppings: fresh cilantro, diced white onion, radishes, guacamole, salsa

Instructions

  1. Combine spices (paprika, cumin, oregano, garlic powder, salt) in a bowl.
  2. Trim excess fat from beef and pat dry.
  3. Rub spice mixture over all sides of the beef.
  4. Sear beef in an Instant Pot with vegetable oil for about 3 minutes on each side.
  5. Add fresh orange juice, sliced onion, and jalapeno to the pot.
  6. Pressure cook on manual for 90 minutes; allow natural release for 15 minutes before shredding.
  7. Assemble tacos with shredded beef and desired toppings.
