- 1 medium onion (quartered)
- 1 tsp cumin
- 1 tbsp dried oregano
- 1 tsp ground coriander (optional)
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp pepper
- 2 tsp olive oil
- 4–5 tbsp water (optional for pan frying)
Instructions
- Blend the chipotle peppers, lime juice, orange juice, cilantro, garlic, onion, cumin, oregano, smoked paprika, salt, and pepper until smooth.
- Marinate the chicken in the mixture for at least 30 minutes (or overnight for more flavor).
- Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for 5–7 minutes on each side until fully cooked and charred.
- Let the chicken rest for a few minutes before slicing and serving with your choice of sides.
