  • 3 cups corn kernels (fresh or frozen)
  • 1 can (4 ounces) roasted chiles
  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 1 teaspoon chile powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoons cilantro (chopped)
  • 1/2 cup crumbled feta cheese
  • 1 cup shredded Mexican blend cheese (optional; only if making this a hot dip)

Instructions

  1. If using frozen corn, microwave until warm (about 3 minutes). For fresh corn, grill cobs for 4-5 minutes until tender; then cut the corn from the cob.
  2. In a mixing bowl, combine warm corn with roasted chiles, mayonnaise, sour cream, chile powder, garlic powder, and kosher salt.
  3. Fold in half of the chopped cilantro and feta cheese into the mixture.
  4. Mix thoroughly and serve garnished with remaining feta cheese and cilantro.
