  • 4 large russet potatoes
  • 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
  • 6 tablespoons butter
  • 1.5 cups heavy cream
  • 2/3 cup grated parmesan cheese
  • 2 tablespoons minced garlic
  • 4 tablespoons olive oil
  • 1.5 tablespoons sea salt
  • 2 teaspoons kosher salt
  • 2 tablespoons cajun seasonings
  • 4 tablespoons avocado oil (divided)
  • 2 wedges lemon (juice of)
  • 1/21 teaspoon red pepper flakes
  • 1 teaspoon freshly cracked pepper
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.
  2. Rub each scrubbed potato with olive oil and sprinkle generously with sea salt. Place them on the baking pan without poking holes.
  3. Bake for 50–60 minutes until tender when pierced with a fork.
  4. While the potatoes bake, season the steak bites with kosher salt and cajun seasonings. In a cast iron skillet over high heat, sear the steak bites in avocado oil until cooked to your liking.
  5. For the creamy sauce, combine heavy cream, parmesan cheese, minced garlic, lemon juice, and red pepper flakes in a saucepan over medium heat until warmed through and slightly thickened.
  6. Serve baked potatoes topped with steak bites and drizzle with the creamy sauce.
