- 4 large russet potatoes
- 2 lbs steak (NY strip, ribeye, sirloin, or tenderloin)
- 6 tablespoons butter
- 1.5 cups heavy cream
- 2/3 cup grated parmesan cheese
- 2 tablespoons minced garlic
- 4 tablespoons olive oil
- 1.5 tablespoons sea salt
- 2 teaspoons kosher salt
- 2 tablespoons cajun seasonings
- 4 tablespoons avocado oil (divided)
- 2 wedges lemon (juice of)
- 1/2–1 teaspoon red pepper flakes
- 1 teaspoon freshly cracked pepper
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking pan with parchment paper.
- Rub each scrubbed potato with olive oil and sprinkle generously with sea salt. Place them on the baking pan without poking holes.
- Bake for 50–60 minutes until tender when pierced with a fork.
- While the potatoes bake, season the steak bites with kosher salt and cajun seasonings. In a cast iron skillet over high heat, sear the steak bites in avocado oil until cooked to your liking.
- For the creamy sauce, combine heavy cream, parmesan cheese, minced garlic, lemon juice, and red pepper flakes in a saucepan over medium heat until warmed through and slightly thickened.
- Serve baked potatoes topped with steak bites and drizzle with the creamy sauce.
