  • 1 ½ cups dry green or brown lentils
  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon stone-ground mustard
  • 2 small cloves garlic, minced
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 3 celery stalks, diced

Instructions

  1. Cook the lentils by combining them with water in a large saucepan. Bring to a boil, then simmer for about 20 minutes until tender.
  2. While lentils cook, whisk together olive oil, apple cider vinegar, maple syrup, mustard, minced garlic, salt, and pepper in a mixing bowl.
  3. Once cooked, drain and rinse the lentils under cold water to cool.
  4. Dice the cucumber, onion, bell pepper, and celery; add to the dressing and toss gently.
  5. Combine cooled lentils with the vegetable mixture in the bowl. Adjust seasoning if needed and serve immediately.
