Ingredients

  • 1 cup uncooked orzo
  • 2 mini cucumbers, chopped
  • 1 cup cherry tomatoes, quartered
  • 2 tablespoons chopped red onion
  • 2 cups cooked chicken, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish
  • 2.5 tablespoons olive oil
  • 1.5 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 teaspoon honey
  • 1 clove garlic, minced

Instructions

  1. Cook the orzo in boiling salted water until al dente. Drain and rinse under cool water.
  2. In a large bowl, combine the cooked orzo, cucumbers, tomatoes, red onion, and shredded chicken.
