  • 17.3 oz (2) sheets of puff pastry
  • 4 oz cream cheese (softened)
  • 1 Tbsp heavy whipping cream
  • 2 Tbsp white granulated sugar
  • 1/2 tsp lemon zest
  • 1/2 tsp vanilla extract
  • 34 oz lemon curd
  • Little bit of water (to seal pastry)
  • 1 egg (for brushing pastry)
  • 2 Tbsp heavy whipping cream (warmed)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened cream cheese, sugar, lemon zest, vanilla extract, and heavy whipping cream; beat until smooth.
  3. Unfold puff pastry sheets and cut into rectangles.
  4. Place 1.5-2 tbsp of the cream cheese mixture on six rectangles and top with 1-1.5 tbsp lemon curd.
  5. Seal with another rectangle on top; press edges with water to secure.
  6. Brush tops with whisked egg and poke holes for venting.
  7. Bake for 18-20 minutes until golden brown.
  8. Mix powdered sugar with warmed heavy cream for glaze; drizzle over cooled pastries before serving.
