Ingredients

Scale
  • 300 g linguine or spaghetti
  • 1 tablespoon olive oil
  • 40 g unsalted butter
  • 6 garlic cloves, sliced
  • 1/2 teaspoon red chili flakes
  • Zest and juice of 1 lemon
  • 50 g grated Parmesan or veggie hard Italian cheese
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted water according to package instructions until al dente. Reserve 1-2 cups of pasta water, then drain.
  2. In a large pan over low-medium heat, warm olive oil and melt the butter.
  3. Add sliced garlic and red chili flakes; cook until garlic turns golden but not burnt (about 1-2 minutes).
  4. Toss drained pasta into the pan, combining well with sauce. If it’s too thick, add reserved pasta water gradually.
  5. Stir in lemon zest and juice, then add cheese until melted. Mix in chopped parsley and season with salt and pepper before serving.
