  • 2 pounds confectioners sugar
  • 1/2 cup fruit juice or broth (as a bourbon substitute)
  • 2 cups finely chopped pecans
  • 14 ounces high-quality chocolate (for coating)
  • Pecan halves (for garnish)

Instructions

  1. In a mixing bowl, cream together softened butter and 1 pound of confectioners sugar until smooth.
  2. Stir in your chosen fruit juice or broth along with the remaining sugar and chopped pecans until fully combined.
  3. Cover the mixture and chill in the refrigerator for about 2 hours until firm.
  4. Roll tablespoon-sized portions into balls and place them on a baking sheet lined with parchment paper.
  5. Freeze until hard, then melt chocolate in a double boiler over low heat.
  6. Dip each ball into melted chocolate, tapping off excess, and place back on parchment paper.
