  • 10 chicken pieces (bone-in)
  • 6 green onions
  • 6 cloves garlic
  • 2 jalapeno peppers
  • 2 red chiles
  • 1 ½ inch piece ginger
  • ⅓ cup fresh lime juice
  • ¼ cup reduced-sodium soy sauce
  • 2 tablespoons brown sugar
  • Fresh thyme leaves
  • Fresh parsley leaves
  • 1 lime (zested)
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. In a mixing bowl, combine chopped green onions, smashed garlic, chopped jalapenos, red chiles, ginger, lime juice, soy sauce, brown sugar, thyme, parsley, spices, and lime zest. Mix until smooth.
  2. Place chicken in a large baking dish and pour marinade over it. Ensure each piece is well-coated. Cover and marinate in the fridge for at least 2 hours or overnight.
  3. Preheat your oven to 375°F (190°C). Bake the chicken uncovered for about 40 minutes or until it reaches an internal temperature of 165°F (74°C).
  4. Let it rest for about 5 minutes before serving.
