  • 16 ounces rotini pasta
  • 1 cup broccoli florets
  • 1 cup diced bell pepper
  • 1 cup sliced English cucumber
  • ½ cup finely diced red onion
  • 8 ounces cherry tomatoes, halved
  • 8 ounces sliced black olives
  • 1 cup diced mozzarella cheese
  • 5 ounces turkey pepperoni (or turkey slices)
  • Fresh parsley for garnish
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 tablespoon oregano (dried)
  • 1 tablespoon parsley (dried)
  • 4 teaspoons sugar
  • ¼ cup water
  • 1½ cups oil
  • ¼ cup apple vinegar
  • 1 teaspoon lemon juice

Instructions

  1. Cook rotini pasta in a large pot of salted boiling water until al dente; drain and rinse under cold water.
  2. While pasta cooks, prepare vegetables: chop broccoli, dice bell pepper and onion, slice cherry tomatoes and cucumber.
  3. In a mixing bowl, combine cooled pasta with prepared vegetables, olives, mozzarella cheese, and turkey pepperoni.
  4. In another bowl, whisk together oil, vinegar, lemon juice, garlic powder, oregano, dried parsley, sugar, salt, and pepper to create the dressing.
  5. Pour dressing over pasta salad mixture and toss gently to coat evenly. Adjust seasoning if necessary.
  6. Chill in the fridge for at least one hour before serving; garnish with parsley.
