Ingredients

  • 4 slices sourdough bread
  • 1 cup white cheddar cheese, shredded
  • 1 medium ripe peach, sliced
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter, softened
  • a pinch salt (optional)

Instructions

  1. Preheat your cast iron skillet over medium heat.
  2. Spread softened butter on one side of each slice of sourdough bread.
  3. On the unbuttered side of two slices, layer half the cheddar cheese, add peach slices, drizzle honey, sprinkle salt (if desired), top with remaining cheese, and close with the other slices (buttered side up).
  4. Cook in the skillet for 3-5 minutes until golden brown and cheese melts; flip carefully using a spatula and cook for another 3-5 minutes.
  5. Remove from heat, let cool briefly, slice in half, and serve immediately.
