Ingredients

  • 9½ cups fresh tomatoes (diced)
  • 2 cups onions (diced)
  • 2 cups green bell pepper (diced)
  • 10 cloves fresh garlic (minced)
  • ¾ cup jalapeno peppers (diced)
  • ½ cup cilantro (chopped)
  • 1 cup apple cider vinegar
  • 2 tablespoons kosher salt
  • ¼ cup granulated sugar

Instructions

  1. Thoroughly wash all vegetables. Dice tomatoes, onions, bell peppers, and jalapenos; mince garlic and chop cilantro.
  2. In a large pot, combine diced vegetables with minced garlic, kosher salt, and sugar. Stir well.
  3. Add apple cider vinegar to the mixture, mixing until evenly distributed.
  4. Heat the pot over medium heat until it reaches a gentle boil; then reduce heat and simmer for about 15 minutes.
  5. Prepare canning jars by sterilizing them and keeping them warm.
  6. Carefully fill each jar with hot salsa, leaving half an inch of headspace at the top. Clean the rims before sealing.
  7. Process jars in a water bath canner for approximately 15 minutes.
  8. After processing, remove jars carefully and allow them to cool completely before storing.
