  • ¾ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 ribs celery
  • 1 large yellow onion
  • 1 large green bell pepper
  • 10 cups beef broth
  • 14 ounces chicken sausage
  • 3 pounds medium shrimp
  • 14.5 ounces stewed tomatoes
  • Hot sauce
  • Cajun seasoning
  • Thyme
  • Bay leaves
  • Sliced green onions for serving (optional)
  • Cooked white rice for serving

Instructions

  1. In a large pot over medium-low heat, melt butter. Whisk in flour until smooth; cook for about 30-40 minutes until deep brown.
  2. While the roux cools, chop celery, onion, green pepper, and garlic in a food processor.
  3. Add the vegetable mixture to the roux and cook for 8-12 minutes until tender.
  4. Gradually whisk in beef broth and bring to boil for 15-20 minutes.
  5. Stir in chicken sausage, stewed tomatoes, hot sauce, sugar, seasonings, and bay leaves. Simmer uncovered for 45 minutes.
  6. Mix in gumbo filé powder; simmer for an additional 15 minutes.
  7. Finally, add shrimp and Worcestershire sauce; cook on low for another 45-60 minutes.
  8. Serve over cooked white rice.
