  • 2 lbs salmon fillet (skin-on, cut into 6 portions)
  • 1/2 cup unsalted butter
  • 4 cloves garlic (smashed)
  • 2 Tbsp lime juice (from 1 lime)
  • 2 Tbsp chopped dill
  • 1 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. In a saucepan, melt the butter over medium heat. Add smashed garlic, salt, and pepper; simmer for 1 minute until fragrant.
  2. Stir in dill and lime juice, then remove from heat.
  3. Place salmon fillets skin-side down on a platter, brush with one-third of the garlic lime butter, and marinate while preheating the grill.
  4. Heat the grill to medium (350°F to 400°F) and oil the grates.
  5. Grill salmon skin-side up for about 3 minutes, then flip carefully and brush with more butter. Cook for another 2 minutes until internal temperature reaches 140°F.
  6. Serve on a platter drizzled with remaining butter sauce and garnish with fresh dill and lime wedges.
