  • 1 pound skinless boneless chicken thighs
  • 1 pound asparagus
  • 8 ounces crimini mushrooms
  • 1 onion
  • 2 tablespoons canola oil
  • 1/4 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh grated ginger root
  • 4 garlic cloves

Instructions

  1. Whisk together soy sauce, brown sugar, rice vinegar, cornstarch, ginger, and minced garlic in a bowl; set aside.
  2. Heat a non-stick skillet over medium-high heat. Sauté sliced mushrooms until dry (5-10 minutes); remove from pan.
  3. Add oil to the pan and cook chicken chunks seasoned with salt and pepper until done; remove from pan.
  4. Sauté sliced onion in the same pan until golden (about 5 minutes).
  5. Return mushrooms and chicken to the pan; combine for 3 minutes.
  6. Add asparagus and cook until bright green (1-2 minutes).
  7. Pour in the prepared sauce; stir well and cook until thickened (about 1 minute).
  8. Serve over rice or your choice of side.
