- 1 tablespoon olive oil
- 3 tablespoons butter (divided)
- 1/2 medium onion (chopped)
- 8 ounces cremini mushrooms (sliced)
- 3 cloves garlic (minced)
- 1/2 teaspoon Dijon mustard
- 1/4 cup chicken broth or vegetable broth or white grape juice
- 1/2 teaspoon lemon juice + zest of 1/2 lemon
- 1/2 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt & pepper (to taste)
Instructions
- Boil salted water in a pot and cook pasta until al dente as per package instructions.
- In a skillet, heat olive oil and 1 tablespoon butter over medium-high heat. Sauté chopped onions and sliced mushrooms until browned, about 8–10 minutes.
- Add remaining butter, minced garlic, and Dijon mustard; cook for an additional minute.
- Pour in broth, lemon juice, and zest; let it bubble for one minute.
- Remove from heat and stir in parmesan cheese and parsley. Add a splash of hot pasta water before draining pasta.
- Toss cooked pasta with sauce; season with salt and pepper to taste. Serve immediately.
