Description

  • 3 cups fresh or frozen peaches (drained, thawed)
  • 2/3 cup sugar
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • Grated nutmeg
  • Prepared (unbaked 9" pie shell)
  • Sugar or turbinado sugar (optional)

Instructions

  1. Preheat your oven to 450°F (232°C). Line a 9-inch pie pan with an unbaked pie crust and bake for 5 minutes. Allow it to cool.
  2. Prepare the peaches by blanching them in boiling water for 2 minutes, then transferring them to an ice bath. Peel and slice the peaches thinly.
  3. In a mixing bowl, combine sugar, flour, and salt. In another bowl, whisk together eggs, milk, and cream until smooth. Combine both mixtures to form the custard.
  4. Layer sliced peaches in the baked crust and pour the custard mixture over them. Sprinkle with nutmeg and optional sugar.
  5. Bake at 350°F (175°C) for 45–50 minutes until set and golden brown.
