- 2/3 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 2 eggs
- 1/2 cup milk
- 1/2 cup heavy cream
- Grated nutmeg
- Prepared (unbaked 9" pie shell)
- Sugar or turbinado sugar (optional)
Instructions
- Preheat your oven to 450°F (232°C). Line a 9-inch pie pan with an unbaked pie crust and bake for 5 minutes. Allow it to cool.
- Prepare the peaches by blanching them in boiling water for 2 minutes, then transferring them to an ice bath. Peel and slice the peaches thinly.
- In a mixing bowl, combine sugar, flour, and salt. In another bowl, whisk together eggs, milk, and cream until smooth. Combine both mixtures to form the custard.
- Layer sliced peaches in the baked crust and pour the custard mixture over them. Sprinkle with nutmeg and optional sugar.
- Bake at 350°F (175°C) for 45–50 minutes until set and golden brown.
