Ingredients

  • 1 pound ground beef (or chicken/turkey/mushrooms)
  • 2 tablespoons olive oil
  • 1 medium white onion, diced
  • 2 medium carrots, diced
  • 1 small green cabbage, chopped
  • 68 cups chicken or vegetable stock
  • 3 cloves garlic, minced
  • 2 teaspoons ground ginger
  • 1 teaspoon toasted sesame oil

Instructions

  1. In a large stockpot, brown the ground beef over medium heat for about 5-6 minutes. Remove with a slotted spoon and set aside.
  2. In the same pot, add olive oil and sauté the diced onion for about 5 minutes until softened. Then add diced carrots and minced garlic; sauté for an additional 2 minutes.
  3. Stir in chopped cabbage, the cooked beef, stock, and ground ginger. Mix well.
  4. Bring to a simmer over medium heat, then reduce to low and cover. Simmer for about 15 minutes until vegetables are tender.
  5. Stir in toasted sesame oil. Season with salt and pepper to taste before serving hot.
