- 1 pound ground beef (or chicken/turkey/mushrooms)
- 2 tablespoons olive oil
- 1 medium white onion, diced
- 2 medium carrots, diced
- 1 small green cabbage, chopped
- 6–8 cups chicken or vegetable stock
- 3 cloves garlic, minced
- 2 teaspoons ground ginger
- 1 teaspoon toasted sesame oil
Instructions
- In a large stockpot, brown the ground beef over medium heat for about 5-6 minutes. Remove with a slotted spoon and set aside.
- In the same pot, add olive oil and sauté the diced onion for about 5 minutes until softened. Then add diced carrots and minced garlic; sauté for an additional 2 minutes.
- Stir in chopped cabbage, the cooked beef, stock, and ground ginger. Mix well.
- Bring to a simmer over medium heat, then reduce to low and cover. Simmer for about 15 minutes until vegetables are tender.
- Stir in toasted sesame oil. Season with salt and pepper to taste before serving hot.
