- 28 oz crushed tomatoes
- 4 cups low sodium beef broth
- 2 cups water
- 2 cups reginetti pasta
- 1 bay leaf
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- ¼ cup ricotta cheese (optional for serving)
- ¼ cup grated Parmesan cheese (optional for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Sauté minced onion until translucent (about 3-4 minutes), then add minced garlic and cook for another minute.
- Add ground beef to the pot and cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
- Stir in crushed tomatoes, bay leaf, basil, parsley, oregano, black pepper, and optional red pepper flakes. Pour in beef broth and water; bring to a boil.
- Once boiling, add reginetti pasta or broken lasagna noodles. Reduce heat to simmer and cook according to package instructions until pasta is tender.
