Ingredients

  • 1 lb fresh chow mein noodles
  • 2 cups cabbage, thinly sliced
  • 1 cup celery, sliced
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1/4 cup chicken stock (or cold water)
  • 1/2 tbsp cornstarch

Instructions

  1. Combine sauce ingredients in a small bowl and set aside.
  2. Boil water in a large pan and blanch chow mein noodles for 20-30 seconds until loosened.
  3. Strain noodles using a colander; do not rinse.
  4. In the same pan, heat vegetable oil and sauté onions, cabbage, and celery until softened (about 1 minute).
  5. Push veggies to one side, add remaining oil, then noodles and sauce to the empty space.
  6. Toss all ingredients together until noodles are well-coated in the sauce. Remove from heat and serve hot.
