- 1 lb Brussels sprouts, halved and trimmed
- 1 tbsp olive or avocado oil (for roasting)
- 2 tbsp BBQ sauce
- 1 tbsp coconut aminos (or soy sauce)
- 1 tsp grated ginger
- 1/2 tbsp rice vinegar
- Salt to taste
Instructions
- Preheat your air fryer to 380°F or your oven to 400°F.
- In a mixing bowl, toss halved Brussels sprouts with olive oil and salt until evenly coated.
- For air frying: Cook in the air fryer for 6 minutes, toss, then cook for another 5-7 minutes until crispy. For baking: Spread on a baking sheet and bake for 18-22 minutes, tossing halfway through.
- Meanwhile, in a small saucepan over medium heat, sauté grated ginger in olive oil for about a minute. Add BBQ sauce, coconut aminos, rice vinegar, and salt; cook for another 4-5 minutes until thickened.
- Once cooked, combine Brussels sprouts with the sauce in the saucepan until well coated. Serve warm.
