Description

Indulge in the rich flavors of the Creamy Chicken Mushroom Spinach Skillet, a comforting one-pan dish that brings together tender chicken, savory mushrooms, and vibrant spinach in a luscious creamy sauce. This recipe is perfect for busy weeknights or special occasions, ready in just 30 minutes. The combination of creamy Parmesan and fresh ingredients creates a delightful experience that pairs wonderfully with rice, pasta, or mashed potatoes.

Ingredients

Scale
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 2 cups sliced mushrooms (cremini or button)
  • 3 cloves garlic (minced)
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh spinach
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • A pinch of red pepper flakes (optional)
  • Fresh parsley or thyme for garnish

Instructions

  1. Season the chicken with salt, black pepper, and paprika. Heat olive oil in a large skillet over medium heat and cook the chicken for 5-7 minutes per side until browned and cooked through. Set aside.
  2. In the same skillet, melt butter and sauté mushrooms until golden brown (about 5 minutes). Stir in minced garlic and cook for an additional minute.
  3. Pour in chicken broth and bring to a simmer while scraping the skillet. Reduce heat to low, stir in heavy cream, and gradually add Parmesan cheese until melted.
  4. Return the chicken to the skillet along with fresh spinach, cooking for an additional 2-3 minutes until the spinach wilts.
  5. Serve warm garnished with fresh herbs.
