- 1 tbsp avocado oil

- 1 lb chicken breast

- 1 head kale (destemmed and chopped)
- 1 tbsp olive oil
- Pinch of salt
- 1 gala apple (sliced)
- 1/3 cup wild rice (cooked)
- 1/4 cup almonds (chopped)
Instructions
- Preheat the oven to 415°F (210°C) and line a baking sheet with parchment paper.
- Toss chopped sweet potatoes with avocado oil, salt, pepper, and cinnamon. Spread on the baking sheet and roast for 25-30 minutes.
- Season chicken breasts with salt, pepper, thyme, rosemary, garlic powder, and parsley. Sear in a large pan with avocado oil over medium heat for about 6-7 minutes per side until cooked through.
- In a mixing bowl, combine olive oil, balsamic vinegar, honey, coconut yogurt, salt, pepper, and garlic powder; whisk until smooth.
- Massage chopped kale with olive oil and salt until softened. Assemble by layering kale, roasted sweet potatoes, chicken pieces, wild rice, sliced apple, and drizzle with dressing.
