  • 2 cups shredded rotisserie chicken breast
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup thinly-sliced green onions
  • 3 tablespoons chopped cilantro (optional)
  • Asian salad dressing (homemade)
  • crushed red pepper flakes
  • sesame seeds
  • slivered almonds
  • crispy wonton strips for garnish

Instructions

  1. In a large bowl, combine shredded chicken and half of the Asian dressing. Toss to coat and let sit for at least 10 minutes.
  2. Add the romaine and iceberg lettuce, red cabbage, carrots, green onions, and cilantro to the chicken. Gently toss until mixed.
  3. Just before serving, drizzle the remaining dressing over the salad mix. Toss again and garnish with red pepper flakes, sesame seeds, almonds, and wonton strips.
