  • 1 ½ lb lean boneless beef loin roast
  • ½ white onion
  • 4 cloves garlic
  • 1 jalapeno
  • ½ cup orange juice
  • 15 oz enchilada sauce
  • 8 flour tortillas
  • 1 ½ cups shredded Mexican cheese blend

Instructions

  1. Prepare the Beef: Place beef chunks in a slow cooker with chopped onion, minced garlic, jalapeno, orange juice, oregano, cumin, chili powder, salt, and pepper. Mix well.
  2. Slow Cook the Beef: Cover and cook on low for 6–8 hours until tender. Shred the beef with two forks.
  3. Assemble the Enchiladas: Preheat oven to 375°F (190°C). Spread enchilada sauce on the baking dish bottom. Fill tortillas with shredded beef and cheese; roll tightly and place seam-side down in the dish.
  4. Bake: Pour remaining sauce over enchiladas and top with extra cheese. Bake for about 20 minutes until bubbly.
