- 1 ½ lb lean boneless beef loin roast
- ½ white onion
- 4 cloves garlic
- 1 jalapeno
- ½ cup orange juice
- 15 oz enchilada sauce
- 8 flour tortillas
- 1 ½ cups shredded Mexican cheese blend
Instructions
- Prepare the Beef: Place beef chunks in a slow cooker with chopped onion, minced garlic, jalapeno, orange juice, oregano, cumin, chili powder, salt, and pepper. Mix well.
- Slow Cook the Beef: Cover and cook on low for 6–8 hours until tender. Shred the beef with two forks.
