- 2 pounds thinly sliced flank steak or skirt steak
- Juice of 2 limes
- ½ cup pineapple juice (or fresh orange juice)
- 4 cloves garlic (crushed)
- 1 cup cilantro (chopped)
- ½ cup olive oil
- 2 jalapeños (seeded and minced)
- 1 tablespoon white vinegar
- ½ cup chopped white onion
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon Mexican oregano
- 1 teaspoon cumin
- 1 tablespoon chili powder
Instructions
- In a glass dish or large ziplock bag, combine flank steak with lime juice, pineapple juice, garlic, cilantro, olive oil, jalapeños, vinegar, onion, salt, pepper, oregano, cumin, and chili powder. Mix well to coat the meat thoroughly.
- Cover or seal and refrigerate for at least 2 hours (up to 6 hours).
- Preheat grill to high heat. Remove meat from marinade.
- Grill steak for about 2-3 minutes per side for medium-rare doneness; adjust time for desired doneness.
- Wrap grilled meat in aluminum foil and let rest for 5 minutes before slicing against the grain.
