  • 1 whole snapper (2 pounds), cleaned
  • 2 large cloves garlic, minced
  • ½ habanero pepper, finely minced
  • ½ cup fresh lime juice
  • 4 scallions, chopped
  • 2 tablespoons olive oil
  • 1 large egg yolk
  • 1 cup vegetable oil
  • 2 cloves garlic

Instructions

  1. In a mixing bowl, combine minced garlic, finely minced habanero pepper, kosher salt, chopped scallions, black pepper, lime juice, and olive oil. Mix well.
  2. Coat the cleaned snapper with the marinade in a shallow dish and refrigerate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Grill snapper for about 10 minutes on each side until it flakes easily with a fork.
  4. For the aioli, whisk together egg yolk, minced garlic, Dijon mustard, salt, lime juice in a clean bowl. Gradually drizzle in vegetable oil while whisking until emulsified and creamy.
