  • 4 cloves garlic (minced)
  • 1 1/2 lb ground beef
  • 4 cups cauliflower rice
  • 3/4 head cabbage (chopped)
  • 3 cups marinara sauce
  • Optional: 3 cups mozzarella cheese (shredded)

Instructions

  1. Heat avocado oil in a large sauté pan over medium heat and add minced garlic. Sauté until fragrant.
  2. Increase heat to medium-high, add ground beef with salt and pepper, cooking until browned. Drain excess fat if necessary.
  3. Preheat oven to 350°F (177°C).
  4. In a baking dish, mix cauliflower rice, chopped cabbage, and Italian seasoning thoroughly.
  5. Stir in cooked beef and marinara sauce until well combined.
  6. Bake uncovered for about 30 minutes or until cabbage is crisp-tender.
  7. If using cheese, sprinkle over the casserole and bake for an additional 15 minutes until golden.
