  • 1 tablespoon olive oil
  • 1 small white onion, peeled and diced
  • 3 cloves garlic, minced
  • 8 cups vegetable stock (or chicken stock)
  • 1 small head of Napa cabbage, roughly chopped
  • 1 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 3 eggs, whisked
  • 2 teaspoons toasted sesame oil
  • optional topping: thinly sliced green onions

Instructions

  1. Heat 1 tablespoon of olive oil in a large stockpot over medium-high heat. Sauté 1 diced onion for about 5 minutes until softened, then add 3 minced garlic cloves and sauté for another 1-2 minutes.
  2. Pour in 8 cups of vegetable stock along with 1 small head of chopped Napa cabbage, 1 teaspoon of ground ginger, and 1/4 teaspoon of white pepper. Stir well and bring to a gentle simmer.
  3. Reduce heat to medium and cover the pot, allowing the soup to simmer for about 10 minutes until the cabbage is tender.
  4. While simmering, stir continuously in a circular motion. Slowly drizzle in 3 whisked eggs to create beautiful egg ribbons.
  5. Stir in 2 teaspoons of toasted sesame oil and adjust seasoning if needed. Serve warm, garnished with thinly sliced green onions if desired.
