  • 700 g (3 cups) leftover mashed potato
  • 200 g (3 cups) leftover chopped cooked cabbage
  • 2 tbsp butter
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Optional toppings: poached eggs, chopped fresh parsley, brown sauce

Instructions

  1. Preheat your grill (broiler). In a mixing bowl, combine mashed potatoes and chopped cabbage; season with salt and pepper.
  2. Heat half a tablespoon each of butter and oil in two non-stick frying pans over medium-high heat until bubbling.
  3. Divide the mixture between the pans, pressing down evenly with a spatula.
  4. Fry for 5-7 minutes until golden brown on the edges. Ruffle the top with a fork for extra crispiness.
  5. Brush remaining butter-oil mixture over the tops, then place under the grill for 4-5 minutes until golden.
