Ingredients

Scale
  • 3 cups fresh blueberries (divided)
  • 1/2 cup sugar
  • 1 cup water
  • 2 tablespoons cornstarch (dissolved in 3 tablespoons of water)
  • 1/2 teaspoon vanilla extract
  • 1 cup blueberries (fresh)
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 pound brioche loaf (sliced)
  • 9 eggs
  • 1/2 cup milk
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • salt (pinch)
  • 2 tablespoons butter

Instructions

  1. Prepare the blueberry sauce by combining 2 cups of blueberries, sugar, and water in a saucepan over medium heat. Stir until boiling.
  2. Thicken the sauce by adding a cornstarch mixture while stirring continuously; cook until thickened and then remove from heat.
  3. In a mixing bowl, blend softened cream cheese, powdered sugar, lemon zest, lemon juice, and remaining blueberries until smooth for the filling.
  4. Assemble the French toast by spreading cream cheese filling between slices of brioche to create sandwiches.
  5. Whisk together eggs, milk, sugar, cinnamon, vanilla extract, and salt in a bowl.
  6. Heat butter in a skillet over medium heat; dip each sandwich briefly into the egg mixture before cooking until golden brown on both sides.
  7. Serve warm topped with the blueberry sauce.
