- 3/4 cup softened butter
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 8 ounces cream cheese
- 1 can (14 ounces) sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350°F (175°C). Prepare a 9×13 inch baking pan with parchment paper.
- In a large bowl, cream together the softened butter, sugar, and brown sugar until smooth. Stir in baking soda, salt, flour, and oats until combined. Press half into the bottom of the pan and bake for about 13 minutes until golden.
- For the filling, whisk cream cheese until smooth, then gradually add sweetened condensed milk while whisking to avoid lumps. Mix in vanilla and egg yolk.
- Once crust is baked, pour over the cream cheese mixture and sprinkle blueberries on top. Add remaining oat mixture over the berries and press gently.
- Bake for an additional 20-25 minutes or until edges are golden brown.
- Allow to cool completely before cutting into squares.
