  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 1/3 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar for swirl
  • 1 1/2 tsp ground cinnamon for swirl

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, and cinnamon; set aside.
  3. In a separate bowl, cream together softened butter and sugar until fluffy. Beat in eggs one at a time, then mix in mashed bananas, Greek yogurt, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. For the swirl mixture, combine sugar and cinnamon in a small bowl.
  6. Pour half of the batter into the prepared pan. Sprinkle half of the swirl mixture and half of the blueberries over it. Repeat layers with remaining batter, swirl mixture, and blueberries.
  7. Use a knife to gently swirl through the batter for a marbled effect.
  8. Bake for about 50–60 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
